Toast coriander seeds and cumin seeds in a small skillet over medium heat for about 2 minutes until fragrant and lightly brown.

In a blender, combine papaya and a little bit of beef broth, then process into a smooth paste.

Remove from fridge, uncover, and let the meat come to room temperature for about 30 minutes.

Assemble the skewers starting with a piece of red pepper, then red onion, followed by a beef cube, leaving gaps between ingredients for even cooking.

Repeat the order and finish with a red pepper, using about 6 beef cubes per skewer.

Preheat the barbecue to between 500ºF to 550ºF.

Brush the grates with canola oil using a paper towel to prevent sticking.

Place the skewers on the hot grates, close the lid, and cook for 12 minutes, rotating every 3 to 4 minutes until the internal temperature reaches 145ºF.
