Close the pot and set it to cook for 12 minutes on the multigrain setting.

After cooking, wait 5 minutes and then start the impulse decompression to prevent foam from escaping.

Drain the orzo and transfer it to a bowl to cool slightly, then dress it with oil.

Meanwhile, chop the sun-dried tomatoes into strips, slice the olives, and dice the fresh tomatoes, onion, and scamorza.

Combine everything with the orzo and add the basil, capers, and optional tuna.

Mix well and adjust salt if necessary.
