Ingredients

  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh basil, chopped

Instructions

  1. 1In a large pot, heat olive oil over medium heat.
  2. 2Add the orzo pasta and toast for 2-3 minutes until slightly golden.
  3. 3Pour in the vegetable broth and diced tomatoes (with juice). Stir to combine.
  4. 4Bring the mixture to a boil, then reduce heat to low and cover. Simmer for about 10 minutes, stirring occasionally.
  5. 5After 10 minutes, add the heavy cream, garlic powder, onion powder, salt, black pepper, and red pepper flakes (if using). Stir well.
  6. 6Continue to cook for another 5 minutes, uncovered, until the orzo is tender and the sauce is creamy.
  7. 7Remove from heat and stir in the grated Parmesan cheese until melted and combined.
  8. 8Garnish with fresh basil before serving.
  9. 9Serve warm and enjoy your creamy tomato orzo!

Ingredients

  • 200g udon noodles
  • 2 tbsp soy sauce
  • 1 tbsp unsalted butter
  • 1 tsp sesame oil
  • 1 clove garlic, minced
  • 1/2 tsp ginger, grated
  • 2 green onions, chopped
  • 1/2 tsp chili flakes (optional)
  • Salt to taste
  • Pepper to taste

Instructions

  1. 1Cook the udon noodles according to package instructions until al dente. Drain and set aside.
  2. 2In a large pan, melt the butter over medium heat.
  3. 3Add the minced garlic and grated ginger to the pan, sautéing until fragrant (about 1 minute).
  4. 4Pour in the soy sauce and sesame oil, stirring to combine.
  5. 5Add the cooked udon noodles to the pan, tossing to coat them in the sauce.
  6. 6If desired, sprinkle in chili flakes for added spice and mix well.
  7. 7Season with salt and pepper to taste, adjusting as necessary.
  8. 8Add the chopped green onions and toss again to combine.
  9. 9Serve hot, garnished with additional green onions if desired.
