Make the spice mix by whisking together cumin, ground coriander, allspice, hot paprika, ground cardamom, ground cloves, and ground cinnamon in a small bowl.
In a large saucepan over medium heat, add oil and heat it up.
Add onions, red peppers, and jalapeño peppers to the hot oil and sauté for 1 minute.
Add pressed garlic and sauté for an additional 30 seconds.
Add ground beef to the pan and break it down into small pieces using a meat chopper or spatula.
Incorporate tomato paste into the mixture and cook for 2 minutes.
Remove from heat and transfer the meat mixture to a large bowl.
Add the prepared spice mix, ground sea salt, black pepper, and fresh chopped parsley to the meat mixture and mix well.
Stuff the mixture into large pita pockets, leaving any liquid behind to avoid sogginess.
Transfer the stuffed pitas to a baking sheet lined with parchment paper.
Lightly brush the tops with clarified butter.
Bake in a preheated oven at 400ºF/200ºC for 14 minutes, flipping halfway through.
