Koshary

2 cups brown lentils
2.5 cups water
1 medium spoonful salt
1 teaspoon cumin
pepper
dried coriander
half of a small bag of pasta
2 large onions
oil for frying
3 cups rice
2 cloves garlic
2 tablespoons tomato paste
1/4 cup vinegar
500 gm tomato juice
3 mashed garlic cloves
1/2 cup vinegar
1 cup water
chili to taste

Boil 2 cups of brown lentils with 2.5 cups of water over medium heat.

Add a medium spoonful of salt, 1 teaspoon of cumin, pepper, and dried coriander after the lentils are cooked.

Boil half of a small bag of pasta with water and salt, optionally adding spaghetti.

Drain and rinse the pasta, then add oil from frying onions.

Cut 2 large onions into thin slices and deep fry in oil over low heat until brown.

In the onion oil, cook 3 cups of rice.

For the sauce, sauté 2 cloves of chopped garlic in oil, then add 2 tablespoons of tomato paste, cumin, coriander, and hot pepper to taste, stirring well.

Add 1/4 cup of vinegar, 500 gm of tomato juice, and salt, and leave on medium heat until it thickens.

For Daka sauce, stir 3 mashed garlic cloves with cumin and coriander in oil, then add 1/2 cup of vinegar, 1 cup of water, and chili to taste.
