Cut the chuck roast in half to fit into the cast iron skillet.
Boil the chuck roast before seasoning.
Season the beef with Adobo seasoning, onion powder, garlic powder, black pepper, and paprika.
Heat oil in a cast iron skillet over medium heat.
Sear the beef for about 7 to 8 minutes per side.
Slice onions and bell peppers while the beef is searing.
Add the seared beef to the slow cooker (crock pot).
In the same cast iron, add sliced onions and minced garlic over medium-low heat and cook for about 2 minutes.
Add apple cider vinegar to the onions and garlic, stir to deglaze the pan, and pour it over the beef in the crock pot.
Add diced tomatoes, green chilies, cumin, oregano, Chipotle powder, black pepper, crushed red peppers, and Adobo seasoning to the crock pot and mix well.
Add bay leaves to the mixture and ensure everything is submerged.
Cover the crock pot and set it to cook on high for 6 hours.
After about 5 hours and 20 minutes, check the beef and shred it in the crock pot.
Taste the beef to check for additional seasoning.
Cover the crock pot again and continue cooking for the remaining time.
In the cast iron, add a little oil and sauté bell peppers for about 4 minutes.
After 4 minutes, add sliced onions to the bell peppers and cook for an additional minute.
Season the sautéed vegetables with Adobo seasoning and a squeeze of lime juice.
Turn off the heat after the vegetables are cooked.
