Traditionally made with hawthorn berries, modern variations often use strawberries, making it a popular treat during festivals and fairs. The vibrant, glossy appearance and sweet crunch make it a favorite among children and adults alike, and its popularity has spread beyond China, inspiring similar treats in other cultures.

Agave syrup is a natural sweetener with a similar texture.
Add sugar to a saucepan and place it on low heat.
Add water to the saucepan with the sugar.
Add honey for flavor and to help medicate the mixture.
Do not stir the mixture to prevent crystallization.
Keep the mixture on low heat until the sugar dissolves completely.
Once dissolved, increase the heat to medium and cook for about 8 to 10 minutes until it reaches 300°F (hard crack stage).
Insert a thermometer to monitor the temperature, aiming for 300°F or 150°C.
Once the temperature is reached, turn off the heat.
Add one or two drops of red food coloring and tincture to the mixture and stir.
Coat the strawberries in the sugar mixture.
