Roast Leg of Lamb

1 Leg of Lamb (1.5 to 2 kilos)
6 cloves of garlic (peeled and cut into 4 slices lengthways)
2 to 3 sprigs of rosemary
6 tablespoons of olive oil
2 tablespoons of wholegrain mustard
Freshly ground black pepper

Preheat the oven to 250 degrees centigrade.

Rub the leg of lamb with the mustard and season it with salt and pepper.

Make incisions in the lamb with the small knife. Then put the garlic and rosemary inside the incisions.

Place the lamb onto a roasting tray and drizzle some oil over the top and place on a roasting rack.

Place the roasting tray in the oven and cook for 1 hour. After about 30 minutes lower the temperature to 200 degrees for another 30 minutes.

After the cooking time check that the meat is cooked. The best way is to stick a knife into the thick part of the leg. The cooked meat should be a pinkish color.

Leave the meat to rest for fifteen minutes. Then carve and serve with roast potatoes.
