Greek yogurt reduces calories while maintaining creaminess
Season skinless salmon fillets with salt and black pepper.
Heat olive oil in a skillet over medium heat until very hot.
Add the salmon to the skillet and cook for 3 minutes on one side.
Turn the salmon over and cook for another 3 minutes on the other side.
Remove the salmon from the pan and set aside.
Melt butter in the same pan.
Add minced garlic and sauté for about 30 seconds until fragrant.
Add all-purpose flour and whisk it in, cooking for about 1 minute to brown it slightly.
Pour in chicken broth and whisk everything together, cooking until the mixture thickens.
Stir in heavy cream (or half and half for a healthier option).
Add dried basil, dried parsley, red pepper flakes, onion powder, garlic powder, Parmesan cheese, and a chicken bouillon cube, mixing until well incorporated.
Add chopped spinach to the sauce and mix it in, cooking for about 2 minutes until wilted.
Taste the sauce for salt and adjust as needed.
Place the seared salmon into the sauce and allow it to cook for about 1 minute, basting with the sauce.
