Seafood Bouillabaisse

Cut the crusty French loaf on a bias to create long slices for crostini.
Heat a 12-inch cast iron skillet over medium heat and add a good amount of olive oil to the bottom.

Remove the crostini from the skillet once toasted and set aside.
Prepare the seafood by ensuring the shrimp, scallops, mussels, and clams are fresh and clean.
In a large pot, heat olive oil over medium heat until shimmering.
Add chopped onion, leeks, and fennel; sauté until softened, about 5-7 minutes.
Stir in minced garlic and cook for 1 minute until fragrant.
Add diced tomatoes and cook until they break down, about 5 minutes.
Pour in white wine and bring to a simmer for 3-5 minutes to reduce.
Add fish stock, bay leaves, and orange zest; bring to a boil.
Reduce heat and let simmer for 15 minutes to meld flavors.
Add fish and shellfish; cook until just cooked through, about 5-7 minutes.
Stir in saffron and black pepper; adjust seasoning as needed.
Remove from heat and let rest for 5 minutes to enhance flavors.
Serve hot, garnished with chopped parsley and accompanied by the toasted crostini.
