Preheat oven to 425°F.
In a large skillet, heat oil, garlic, onion, and 1/2 teaspoon seasoning over medium heat for 15 minutes or until the onion is soft, stirring occasionally; remove from heat and let cool.
In a small bowl, whisk the egg.
In a large bowl, gently mix ground chuck, breadcrumbs, remaining 1 tablespoon burger seasoning, parsley, and the onion mixture along with 1-1/2 tablespoons of the whisked egg (reserve remaining whisked egg for another use).
Form the ground chuck mixture into 12 meatballs (about 1/3 cup each).
Place meatballs on a cookie sheet and bake for 20 minutes; top each with 1 piece of cheese and bake for an additional 2 minutes or until the internal temperature of the meatballs reaches 160°F.
Layer the bottom halves of the buns with spinach leaves, meatballs, and roasted red peppers; cover with the top halves.
