1/2 cup dry red wine
3 cups low sodium beef stock
1/2 tbsp Worcestershire sauce
1 pinch kosher salt
1 pinch black pepper
1 dried bay leaf
1 tsp dried thyme
1 tbsp prepared horseradish
3 large carrots (cut into 1.5 to 2-inch chunks)

8 oz crushed tomatoes

Hit 'Sauté' on the Instant Pot and add 2 tbsp of olive oil.

Cube beef into 2-inch pieces and season with salt and pepper.

Seal the lid and set to cook for 30 minutes on high pressure.

After cooking, let pressure release naturally for at least 15 minutes.

Open the Instant Pot and optionally thicken the stew with a cornstarch slurry made from 3 tbsp of water and 2 tbsp of cornstarch.

Stir the cornstarch slurry into the stew while on sauté until thickened.
