Boil red kidney beans for about 30 to 35 minutes on medium heat.

Check if the beans are cooked by pressing one; if it doesn't press down, cook longer.

Wash the rice thoroughly a few times until the water is clear.

Remove garlic from the pot with the beans and mix the beans around.

Take out some of the red kidney beans for color.

Add coconut milk to the pot.

Fill the coconut milk tin halfway with water and add that to the pot as well.

Mix the ingredients and bring to a boil over medium heat.

Add fresh thyme, spring onion, Scotch bonnet pepper, whole pimento, salt, and all-purpose seasoning.

Add 1 tablespoon of butter and mix until melted.

Drain the washed rice and add it to the mixture, incorporating everything together.

Put the lid on the pot slightly ajar to prevent boiling over and cook for about 10 to 15 minutes.

After 10 to 15 minutes, when the liquid has evaporated, cover the pot with foil and then put the lid on to steam for another 10 to 15 minutes.

Once cooked, mix the rice and remove the Scotch bonnet pepper before serving.
