Soak 500 grams of red kidney beans in water overnight or for about 6 hours.

Discard the soaking water and rinse the beans thoroughly.

In a large pot, add the rinsed beans and 4 pints of water, then add a little salt.

Bring the water to a boil over high heat and boil the beans for about 30 minutes.

After 30 minutes, add 2 bay leaves, a little cinnamon, 3-4 cloves, and 2 teaspoons of peppercorns.

Add 1 teaspoon of nutmeg powder and continue boiling for another 30 minutes.

After 1 hour of boiling, add a couple of handfuls of fresh thyme, 2 large teaspoons of allspice, 1 finely chopped small onion, and 1 tablespoon of chopped garlic.

After another 15 minutes, add 5 cups of washed basmati rice and 100 grams of cream coconut to the pot.

Reduce heat to medium and cook for about 15 minutes, stirring occasionally.

If desired, add hot pepper sauce for flavor.

Turn off the heat and let it sit covered for 5-6 minutes before serving.
