Canned beans save time and effort.

Sauté diced onion and pimento peppers for about two minutes.

Add in 1 can of dried pan peas and washed white rice.

Add sliced scallion, ginger, fresh thyme, and crushed whole garlic cloves.

Mix the ingredients together.

Add coconut milk and water to the pot.

Season with ground cinnamon, ground cloves, onion powder, garlic powder, salt, and black pepper.

Mix everything well and cover the pot with foil paper.

Bring to a boil over high heat.

Cover with a lid on top of the foil paper and reduce heat to low to cook the rice.

Remove scallion, whole garlic cloves, and thyme before serving.
