Mix the yeast with a bit of sugar, flour, and warm milk to create a batter similar in thickness to pancake batter. Let it rise for about 20 minutes.

Beat the eggs (8 whole eggs + 6 yolks) with sugar until pale and fluffy. Add vanilla beans or extract. Save the egg whites for glazing.

Melt the butter and let it cool slightly. Add it to the beaten egg mixture, then incorporate the sponge (the risen starter).

Gradually add the flour and knead the dough until elastic and smooth. Cover and let it rise for 1 hour.

Preheat the oven to 180°C (356°F). Prepare the baking forms by greasing them with vegetable oil. Fill each mold with dough up to 1/3 full and let them rise for another 30 minutes.

Bake the small ones for about 15 minutes and the larger ones for 30–40 minutes. Check with a skewer after 20 minutes to ensure it's fully baked.
