Break 6 eggs directly into the saucepan.

Add a pad of butter or a tablespoon into the saucepan with the eggs.

Use a spatula to beat the eggs in the pan.

Stir the eggs continuously while cooking.

Remove the saucepan from the heat occasionally to prevent the eggs from cooking too fast.

Return the saucepan to the heat after stirring.

Continue to stir and remove from heat as needed until the eggs start to come together.

Add a couple more pats of butter when the eggs are just shy of being done.

Add sour cream when the eggs are still a little runny and stir to incorporate.

Season with salt and black pepper to taste.

Fold in chopped chives before serving.
