Roast 2-3 Romano Peppers and 2 medium red chilies in olive oil at 220° C for about 20 minutes until charred.

Cover roasted peppers and chilies for 20 minutes to cool down.

Peel off the skins of the peppers and chilies and remove seeds.

In a blender, add 100 G of roast red pepper flesh, 20 G of roast chili flesh, and one more sliced red chili.

Add 30 ml of lemon juice, 1 teaspoon of apple cider vinegar, 1 teaspoon of honey, 1 clove of garlic, and 1/4 teaspoon of salt.

Add 65 G of tahini and 50 G of mayo.

Blend on high for about 1 minute until well combined.

For the second sauce, blend 2 preserved lemons (seeds removed), 1 clove of garlic, 5 ml of apple cider vinegar, 50 ml of lemon juice, 75 G of tahini, and 75 G of mayo with 50 ml of water for 1 minute.

For the third sauce, blend 25 G of fresh parsley, 25 G of fresh coriander, 1 medium green chili, 1 clove of garlic, 1/2 teaspoon of salt, 1 teaspoon of apple cider vinegar, 75 ml of lemon juice, 1 teaspoon of honey, 65 G of tahini, and 50 G of mayo for 1 minute.
