Heat oil in a pot until hot but not smoking.
Add cumin seeds to the hot oil and listen for them to dance and pop.
Add chopped onions and a little garlic to the pot; stir.
Sprinkle a little salt on the onions to help them cook faster and become sweeter.
Cook the onions for about 5 to 7 minutes until translucent.
Add tomato paste and cook to remove the raw flavor.
Add turmeric, cayenne pepper, cumin powder, coriander powder, and paprika; cook for about 10 seconds to release the flavors.
Chop sweet potato, carrots, and cauliflower into uniform pieces; add to the pot.
Add brown lentils and red lentils to the pot; mix well.
Pour in enough water to cover all the vegetables and lentils completely.
Close the lid and simmer the mixture.
Once cooked, turn off the heat and add spinach to the pot; push it in to wilt.
Plate the dish and enjoy.
