Add chopped onions and sauté until translucent, about 5 minutes.
Stir in minced garlic and cook for 1 minute until fragrant.
Add diced wild game meat and brown on all sides, about 8-10 minutes.
Mix in chopped carrots, celery, and potatoes; cook for 5 minutes.
Pour in red wine and scrape the bottom of the pot to deglaze.
Add beef broth, bay leaves, thyme, and juniper berries; stir to combine.
Bring to a boil, then reduce heat to low and cover.
Simmer for 1.5 to 2 hours until meat is tender.
Add sliced mushrooms and cook for an additional 15 minutes.
Season with salt and black pepper to taste before serving.
