Pat dry 12 jumbo shrimp (peeled and deveined) with paper towels and season with sea salt and freshly cracked black pepper.

Heat a semi-deep fry pan over medium heat and add 1/4 cup extra virgin olive oil.

One minute later, add 1 cup of round rice and pinch in 1/2 teaspoon saffron threads; mix together and cook the rice for 2 minutes.

Add 4 cups of high-quality fish broth and gently mix around while it cooks, stirring the rice occasionally.

15 minutes after adding the broth, add the shrimp and give it a gentle mix; cook for 3 to 5 more minutes.
