Homemade Chili & Cornbread Biscuits

Cultural Context

Chili originated in the southwestern United States, often associated with Tex-Mex cuisine. It's a dish that brings warmth and comfort, traditionally made with meat and beans, and often spiced to taste. Cornbread biscuits, a Southern staple, complement chili perfectly, creating a hearty meal. Today, variations abound, with vegetarian and vegan options becoming increasingly popular, making chili a beloved dish across the globe.

1

In a bowl, season 3 lb of Chuck meat with salt, chili powder, and cumin; massage the seasoning into the meat.

2

Heat avocado oil in a pot over medium-high heat and brown the beef in batches, about four separate batches.

3

Remove browned beef from the pot using a slotted spoon.

4

Add tomato puree to the pot and cook for a few minutes until it becomes a slurry.

5

Deglaze the pot with 16 oz of beer, stirring well.

6

Add a jar of salsa to the pot and mix well.

7

Crush tortilla chips and add them to the pot to thicken the chili.

8

Stir in dehydrated onion and combine everything.

9

Return the browned beef to the pot and add two adobo chilies and some adobo sauce; stir to combine.

10

Cover the pot and place it in a preheated oven at 250°F for a couple of hours.

11

For cornbread biscuits, mix flour, cornmeal, 2 and 1/2 teaspoons of baking soda, and salt in a bowl.

12

Add lard and butter to the dry ingredients and mix until coarse crumbs form.

13

Make a well in the mixture and pour in buttermilk; combine until mixed.

14

Scoop the mixture onto a tray lined with parchment paper and place it in the oven.
