Traditionally enjoyed as a breakfast or light meal, it showcases the use of saltfish, a preserved fish that was historically a staple for sailors and fishermen. This dish is often served with bread or fried plantains, making it a beloved part of Caribbean cuisine. Today, variations can be found across the Caribbean, each with unique twists, but the essence of fresh vegetables and zesty lime remains constant.

Pour boiling water over 1 pound of salted Pollock in a deep bowl to rehydrate and remove salt.
Allow the water to cool down with the Pollock in it.
Once cool enough to handle, rinse the Pollock and squeeze out excess water and salt.
Shred the Pollock using your fingers, checking for any bones.
Transfer the shredded Pollock to a larger bowl.
Add the juice of 1/2 lime to the Pollock to reduce fishy smell.
Add thinly sliced onion, diced tomato, grated carrot, diced scallions, and both types of pepper to the bowl.
Sprinkle in fresh thyme leaves and black pepper.
Drizzle olive oil over the mixture and toss everything together until well combined.
