Scrape the brown coconut and put it in a bowl, set aside.
Remove any brown flakes from the sweet rice flakes bag.
Put the sweet rice flakes in a large strainer and rinse with water, then let air dry for a few minutes.
Put the rinsed sweet rice flakes in a bowl and set aside.
Scoop some coconut shreds into a bowl, saving some for topping later.
Pour in about 1 and 1/2 cups of young coconut juice and mix with the coconut shreds.
Strain the mixture into a small saucepan.
Using medium-low heat, add 4 tablespoons of sugar and 2 drops of pandan extract, mix well, and remove from heat.
Add some of the coconut mixture onto the sweet rice flakes and mix.
Cover with plastic wrap for 15 minutes.
After 15 minutes, add a few more spoons of the coconut mixture and cover again to let the sweet rice flakes absorb it.
Sprinkle some coconut shreds on top before serving.
