Add 8 ounces of softened cream cheese to a bowl.
Add 1/4 teaspoon of vanilla extract, 1 teaspoon of orange or lemon juice, and 2 to 4 tablespoons of sugar to the cream cheese.
Add 1 egg yolk and mix until well combined.
Scrape the sides of the bowl and mix again for a few seconds.
In a separate bowl, add 1 large egg and 2 teaspoons of water and mix until combined to make an egg wash.
Add some flour to your counter or table and unfold your puff pastry.
Cut the sheet of puff pastry into four equal squares.
Add a bit of egg wash to all four corners of the pastry squares.
Add a few heaping tablespoons of the cheese mixture to the center of each pastry square.
Add egg wash to all the exposed pastry edges.
Sprinkle some cinnamon and sugar on the edges if desired.
Place the pastry on a sheet pan lined with parchment paper or a silicone baking mat.
Bake at 400 degrees Fahrenheit (205 Celsius) for 15 to 20 minutes until it puffs up and is nice and golden brown.
Allow the pastries to cool for 10 to 15 minutes before serving.
