In a bowl, add 8 oz of cream cheese, 1/4 cup of sugar, 1/4 teaspoon of salt, and 1 teaspoon of vanilla extract.
Using an electric mixer, beat everything together until smooth.
Fill a piping bag with the cream cheese mixture and cut the tip off the piping bag around 2 cm.
Place a sheet of puff pastry on a cutting board and cut it into six equal rectangles.
Using a small knife, score a smaller rectangle into each puff pastry piece without cutting all the way through.
Repeat this process with the other puff pastry pieces.
Place the scored puff pastry on a lined baking sheet.
Pipe the cream cheese filling into the center of each puff pastry piece.
In a bowl, whisk together 1 egg and 1 tablespoon of water to make the egg wash.
Dip a brush in the egg wash and brush the edges of the puff pastry.
Place the cheese danishes in the oven at 400°F for 15 to 16 minutes.
Once they have finished baking, let them cool down on a cooling rack.
