Bring cream cheese to room temperature or heat in the microwave for a few seconds to soften.

In a medium bowl, combine 8 ounces of cream cheese, 2 tablespoons of white granulated sugar, 1 teaspoon of vanilla extract, and 1 teaspoon of lemon juice. Blend together using a spatula or electric hand mixer until smooth.

Open the crescent roll dough tubes and keep them in tube shape. Cut each tube halfway to create 8 pieces from each package, totaling 16 pieces.

Place the cut pieces on a parchment-lined baking sheet, giving them room to flatten.
