Make the filling by mixing 4 oz of cream cheese, 1 tablespoon of sour cream, 1 egg yolk, lemon zest, 3 tablespoons of sugar, and 1/2 teaspoon of vanilla extract until combined.
Roll out the puff pastry on a floured surface to about 10x10 inches.
Cut the pastry into quarters.
Place about 1 tablespoon of filling in the center of each pastry square.
Brush the edges of the pastry with egg wash.
Pinch the corners of the pastry together to seal the filling inside.
Transfer the danishes to a baking sheet lined with parchment paper.
Refrigerate the danishes for about 30 minutes to firm up.
Preheat the oven to 400°F (204°C).
Brush the tops of the danishes with egg wash before baking.
Bake for 20-25 minutes until golden brown and puffy.
Let cool for about 5 minutes before serving, then sprinkle with confectioner sugar.
