Sweet Potato Lentil Curry

1 tablespoon neutral-flavored oil
1.25 pounds sweet potatoes
1 tablespoon minced garlic
1-2 tablespoons finely-diced and seeded serrano, Thai bird chile, or jalapeno pepper
3 tablespoons Thai red curry paste
½ teaspoon ground ginger
2 teaspoons ground turmeric
2 tablespoons tomato paste
1 teaspoon salt
4-5 cups low-sodium vegetable or chicken stock
¼ cup maple syrup or coconut sugar
1 cup dried brown or green lentils
1 (14.5 ounce) can full-fat coconut milk
5 ounces fresh baby spinach
Juice of 1 lime

Heat olive oil in a large pot over medium heat.

Add chopped onion, garlic, and ginger. Sauté until the onion is translucent, about 5 minutes.

Stir in curry powder, cumin, turmeric, salt, and black pepper. Cook for another minute until fragrant.

Add diced sweet potatoes and lentils to the pot. Stir to combine with the spices.

Pour in the coconut milk and vegetable broth. Bring to a boil, then reduce heat to low.

Cover and simmer for about 20-25 minutes, or until the sweet potatoes and lentils are tender.

Stir in the chopped spinach and cook for an additional 5 minutes until wilted.

Taste and adjust seasoning if necessary.
