1 tbsp Dijon mustard
2 tbsp white wine vinegar
1 tbsp honey
2 tbsp lemon juice
1 grapefruit, segmented
1/4 cup olive oil
1/2 tsp Maldon sea salt
1/2 cup fennel, thinly sliced
1/2 cup onion, thinly sliced
1 cup mushrooms, sliced
8 oz salami
8 oz scallops

Add Dijon mustard to a bowl.

Add white wine vinegar to the bowl.

Add honey to the bowl.

Add lemon juice to the bowl.

Add grapefruit to the bowl.

Add olive oil to the bowl and whisk.

Season the dressing with salt and pepper and put to one side.

Trim the fennel using a mandolin and thinly slice it.
