Peanut Butter Cookies with Chocolate Chips

1 cup flour
1 cup sweet rice flour
1 tsp xanthan gum
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup butter
1 cup brown sugar
1/2 cup white sugar
1 cup peanut butter
1 tsp vanilla
1 large egg
1 cup chocolate chips

In a medium bowl, whisk together flour, sweet rice flour, xanthan gum, baking powder, baking soda, and salt.

Use a stand mixer to beat the butter until creamy.

Mix in brown sugar, white sugar, and peanut butter until fluffy.

Add in vanilla and then the eggs, and beat until well combined.

On low speed, add in the dry ingredients and stir in chocolate chips and any other chips by hand.

Cover and chill the dough.

When ready to bake, preheat the oven.

Scoop the dough onto a baking sheet about two inches apart.

Bake for approximately 10 minutes until set.
