500 g red kidney beans
2 cups brown basmati rice
1/2 onion, finely chopped
4 cloves garlic
4 tbsp fresh thyme
2 tsp fresh ginger
1 scotch bonnet pepper
1 stalk scallion
2 tsp pimento seeds
1 tbsp all-purpose seasoning
1 tsp seasoned salt
1/2 tsp black pepper
1/2 tsp salt
1 tbsp unsalted butter
4 cups water
fresh coconut (or Grace coconut milk)

Wash the red kidney beans in cold water to remove impurities.

Crush the pimento seeds, garlic, and ginger to release flavors.

Add the crushed ingredients to the washed beans.

Add thyme and scallion to the beans.

Add salt and some of the remaining seasonings to the beans.

Pour water from the kettle over the beans until covered.

Cook on medium heat, covered.

Break the coconut using a hammer or by throwing it against a wall.

Remove the coconut juice and wash the coconut.

Cut the coconut into thin pieces and blend with 4 cups of cold water.

Strain the blended coconut to extract the coconut milk.
