Crustless Spinach Quiche

5 large eggs
6 oz low-fat cottage cheese
1 cup shredded swiss cheese
4 oz feta cheese
10 oz frozen spinach
2 tablespoons melted margarine
1/2 teaspoon nutmeg
dash of salt (optional)

Wash hands with warm soapy water for 20 seconds, rinse thoroughly, and dry.

Beat the 5 large eggs in a bowl.

Spray a 10-inch pie or quiche pan with vegetable oil spray.

Preheat the oven to 350°F.

Add 6 oz of low-fat cottage cheese to the beaten eggs.

Add 1 cup of shredded swiss cheese to the mixture.

Add 4 oz of feta cheese to the mixture.

Thaw 10 oz of frozen spinach in the microwave, then squeeze it with several paper towels until dry, and add to the mixture.

Add 2 tablespoons of melted margarine (or any oil, such as olive oil) to the mixture.

Add 1/2 teaspoon of nutmeg and a dash of salt (optional) to the mixture.

Add a pinch of pepper to the mixture.

Pour the mixture into the prepared pie or quiche pan.

Place the pan in the preheated oven and bake for approximately 35 minutes until golden brown and solid.
