Preheat the oven to 350°.

Lightly grease a 9-inch pie pan.

Chop one onion.

Drain one 10 oz thawed package of frozen spinach and squeeze to release moisture.

Shred enough monster cheese to make three cups.

Heat 1 tbsp of oil in a large skillet over medium-high heat and add the onions.

Cook and stir the onions until they're soft, about 3 minutes.

Add the drained spinach and continue to cook until all excess moisture has evaporated.

Remove the mixture from the heat.

Crack five eggs into a large bowl and stir with a whisk.

Add 1/4 teaspoon of salt and 1/8 teaspoon of pepper to the eggs.

Add the shredded cheese to the egg mixture.

Add the spinach mixture to the egg and cheese mixture and stir to blend well.
