1 medium onion finely chopped
2 cloves garlic minced
10 ounces fresh spinach roughly chopped
4 large eggs
½ cup milk
1½ cups Gruyere cheese shredded
½ cup feta cheese crumbled
½ cup Parmesan cheese grated
salt and pepper to taste

Preheat the oven to 375°F (190°C).

In a pan, heat olive oil over medium heat and sauté the chopped onion until translucent.

Add minced garlic and sauté for another minute.

Stir in the chopped spinach and cook until wilted.

In a bowl, whisk together the eggs, milk, salt, pepper, and nutmeg.

Add the sautéed spinach mixture and cheeses to the egg mixture and combine well.
