Chop dark chocolate and place it in a heatproof bowl.
Heat heavy cream in a saucepan over medium heat until just simmering.

Add butter, vanilla extract, and sea salt; mix until incorporated.
Chill the mixture in the refrigerator until firm, about 2 hours.
Scoop out small portions of the chilled chocolate mixture with a melon baller or spoon.
Roll each portion into a ball between your palms.
Coat the truffles in cocoa powder, chocolate sprinkles, or chopped hazelnuts as desired.
Place the coated truffles on a parchment-lined tray.
Refrigerate the truffles for at least 30 minutes before serving.
