Vegetable oil is more affordable and has a neutral flavor.
Boil organic pasta until cooked through.
Drain the pasta.
Drizzle with extra virgin olive oil.
Season with ground Himalayan pink salt and coarse black pepper.
Add 2 tablespoons of vegetable oil to a hot pan.
Add 1 black cardamom, 1 star anise, 2 cardamom pods, ½ stick of cinnamon, 3 cloves, and 2 bay leaves to the pan.
Add 1 teaspoon of cumin seeds and 2 sliced red onions to the pan.
Add 2 cloves of garlic and gently fry for 2 minutes.
Add 1 teaspoon of turmeric powder and 1 teaspoon of Kashmiri chilli powder, mixing to ensure spices do not burn.
Add 1 tablespoon of organic tomato puree and 500g of organic passata to the pan.
Add 2 green chillies, 1 teaspoon of coriander powder, 1 teaspoon of cumin powder, and 2 teaspoons of salt.
Add a splash of water and 2 tablespoons of dried fenugreek leaves.
Cook on low heat for 15 minutes.
Add the cooked penne pasta and stir thoroughly.
