- ●1 cup chana dal (split chickpeas)
- ●4 cups water
- ●1 medium onion, finely chopped
- ●2 medium tomatoes, chopped
- ●2 green chilies, slit
- ●1 tsp ginger-garlic paste
- ●1/2 tsp turmeric powder
- ●1 tsp cumin seeds
- ●1 tsp coriander powder
- ●1 tsp garam masala
- ●2 tbsp oil or ghee
- ●Salt to taste
- ●Fresh coriander leaves for garnish
Instructions
- 1Rinse the chana dal under cold water until the water runs clear.
- 2In a large pot, add the rinsed chana dal and 4 cups of water. Bring to a boil, then reduce the heat and simmer for about 30-40 minutes, or until the dal is tender.
- 3In a separate pan, heat the oil or ghee over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
- 4Add the chopped onions and sauté until they are golden brown.
- 5Stir in the ginger-garlic paste and green chilies, and sauté for another minute until fragrant.
- 6Add the chopped tomatoes, turmeric powder, coriander powder, and salt. Cook until the tomatoes are soft and the oil starts to separate from the mixture.
- 7Once the chana dal is cooked, drain any excess water and add it to the onion-tomato mixture.
- 8Mix well and let it simmer for another 5-10 minutes, allowing the flavors to meld together.
- 9Stir in the garam masala and cook for an additional 2 minutes.
- 10Garnish with fresh coriander leaves before serving.

- 6Preheat the grill or oven to medium-high heat (about 375°F).
- 7Lightly brush the kebabs with oil to prevent sticking.
- 8Place the skewers on the grill or in the oven.
- 9Cook for 15-20 minutes, turning occasionally, until the kebabs are cooked through and golden brown.
- 10Serve hot with naan or rice, garnished with lemon wedges and sliced onions.

Instructions
- 1In a pressure cooker, add soaked chickpeas and minced mutton with enough water. Cook for about 15-20 minutes until tender.
- 2Once cooked, drain excess water and let the mixture cool slightly.
- 3In a large mixing bowl, combine the cooked mutton and chickpeas. Mash them together until you achieve a smooth consistency.
- 4Add chopped onion, green chilies, ginger, garlic, garam masala, cumin powder, coriander powder, red chili powder, salt, coriander leaves, and mint leaves to the mixture. Mix well.
- 5Form the mixture into small patties or kebabs.
- 6Dip each kebab in the beaten egg to coat lightly.
- 7Heat oil in a frying pan over medium heat. Once hot, add the kebabs in batches, frying until golden brown on both sides.
- 8Remove the kebabs and place them on paper towels to absorb excess oil.
- 9Serve hot with mint chutney or yogurt dip.
