Preheat the oven to 425°F.
Wash the beef round roast under cold water and pat it dry.
Rub virgin olive oil all over the beef.
Season the beef with salt, paprika, chopped onions, and garlic on all sides, rubbing it in well.
Place the seasoned beef in a regular cooking pan lined with foil to keep the mess down.
Cook the beef in the oven at 425°F for about 15 minutes.
After 15 minutes, flip the beef over and reduce the oven temperature to 325°F.
Continue cooking the beef at 325°F for about 1 hour and 10 minutes.
Remove the beef from the oven and let it rest for 20-25 minutes to allow the juices to settle.
Slice the beef into thin slices and serve.
