In a large pot, combine the agar-agar, sugar, salt, food colouring or pandan essence and coconut milk. Stir until the ingredients are well combined.

Heat the mixture over medium heat, stirring constantly until the sugar and agar agar dissolve completely. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 5 minutes.

Remove the pot from the heat and pour the mixture into a shallow dish or mould and let it cool for at least 2-3 hours, or until it is completely chilled and set.
