List ingredients for curried lamb, including spices and herbs.
Cut lamb into small pieces, cleaning it with vinegar and water.
Season lamb with half of the onion, half of the garlic, half of the cilantro, three quarters of the green seasoning, hot pepper, salt, and black pepper. Mix well and marinate for at least 30 minutes.
Heat oil in a pot, add onion, and cook until edges are brown. Lower heat to medium.
Add curry powder, coriander, garam masala, amchar masala, and cumin to the pot. Stir and add water, cooking until water evaporates and the curry is grainy and fragrant.
Add green seasoning and garlic to the pot, stirring to create a flavorful base.
Add turmeric powder and cook for another minute or two.
Add the marinated lamb to the pot, stirring to combine with the curry paste. Raise heat to high to bring temperature back up.
Reduce heat to low, cover, and cook for 40 minutes, allowing lamb to release its juices.
Check the pot every 10 minutes, stirring to ensure it doesn't stick.
Taste the lamb and adjust seasoning with salt as needed, ensuring it is well-salted for flavor penetration.
If lamb is tender, add potatoes and stir in. Cover and cook until potatoes are tender, checking for doneness after 10 minutes.
Prepare curry chana by rinsing canned chickpeas and cooking them with potatoes, onion, hot pepper, and green seasoning.
Add curry powder and water to the chickpeas, cooking until the liquid evaporates and the curry is fragrant.
Once potatoes are tender, add chickpeas to the pot and mix well.
