Prepare all ingredients: sliced smoked salmon, sliced avocado, fresh dill, and capers.

For the hollandaise sauce, whisk together 4 large egg yolks, 1 tablespoon of lemon juice, a pinch of salt, a little ground black pepper, and a dash of smoked paprika until thick and pale.

Fill a saucepan with a little water (not touching the bottom of the bowl) and bring to a low simmer.

Place the bowl with the egg mixture on top of the saucepan and whisk vigorously while slowly adding in 1/2 cup of melted butter, a little at a time, whisking after each addition until the sauce reaches desired thickness.

Set the hollandaise sauce aside and keep it warm.

Toast the English muffins: heat 1 tablespoon of butter in a pan, place the sliced muffins inside down first, toast until golden, then flip and toast the other side.

Prepare poached eggs: add more water to the saucepan, enough to cover the eggs, and add 1 tablespoon of white vinegar and a generous pinch of salt. Swirl the water in one direction, drop an egg into the center, and cook for 2-3 minutes until the yolk is still squishy.
