Add 2 tablespoons of olive oil to a pan and swirl to coat.

Thinly slice 1 shallot and add it to the pan, sautéing for 1 minute.

Add sliced jalapeno pepper (seeds removed) to the pan and sauté for another minute.

Add 3 cooked and sliced andouille sausages to the pan and toss with shallots and jalapenos.

Season with salt and toss everything together.

Squeeze half a lemon over the mixture and toss again.

Remove the sausage mixture from the pan and set aside.

In the same pan, warm the pita bread to soak up the juices.

Top the toasted pita bread with the sausage mixture.

Add a dollop of greek yogurt on top and garnish with fresh parsley.
