1 Farmer Brown's sourdough bagel
1 tablespoon mayonnaise
1/4 cup mozzarella cheese
1/4 cup cheddar cheese
2 eggs
1/4 cup onions
Sriracha sauce
rocket (arugula)

Preheat the oven to 185°C.

Toast the sourdough bagel for a few minutes until lightly browned.

Spread 1 tablespoon of mayonnaise on the bottom half of the toasted bagel.

Layer 1/4 cup of mozzarella cheese and 1/4 cup of cheddar cheese on top of the mayonnaise.

Place the assembled bagel in the oven for about 5 minutes until the cheese melts and is bubbly.

While the bagel is baking, fry 2 eggs in a pan until sunny side up.

Remove the bagel from the oven and place the fried eggs on top of the melted cheese.

Add a generous amount of onions on top of the eggs.

Drizzle Sriracha sauce over the onions and eggs.

Top with a handful of rocket (arugula) before placing the top half of the bagel on.

Serve the bagel immediately.
