Cut the dough in half and refrigerate one half.
Roll out the dough to about 12-13 inches wide and 18 inches long, about an eighth of an inch thick.
Spread a stripe of prune filling down the center of the rolled-out dough.
Add a layer of pastry cream on top of the prune filling.
Make cuts along the sides of the dough to create strips for braiding.
Layer the strips over each other to form a braid.
Transfer the braid to parchment paper (if not done already).
Tuck the ends of the braid under.
Prepare an egg wash using the reserved egg white and a little water.
Brush the egg wash over the braid and sprinkle with sugar.
Let the braid rest for one hour before baking.
Preheat the oven to 400°F (204°C).
Bake the braid for 15-20 minutes until golden brown.
