Preheat the oven to 400°F (200°C).
Roll out the puff pastry on a floured surface into a rectangle.
Peel, core, and slice the apples into thin wedges.
In a bowl, combine the apple slices with sugar, cinnamon, lemon juice, and vanilla extract.
Spread the apple mixture along the center of the pastry rectangle, leaving space on the edges.
Cut diagonal slits along the sides of the pastry, about 1 inch apart.
Fold the pastry strips over the apple filling, alternating sides to create a braid effect.
Beat the egg and milk together, then brush the mixture over the braided pastry.
Bake in the preheated oven for 25-30 minutes, until golden brown.
Remove from the oven and let cool slightly.
Mix powdered sugar with a little water and almond extract to create a glaze.
Drizzle the glaze over the warm pastry before serving.
