Tsoureki Danish Braid

Cultural Context

Tsoureki is a traditional Greek sweet bread, often enjoyed during Easter celebrations. Its rich, aromatic flavor comes from ingredients like orange zest and mahleb, a spice made from cherry pits. This braided version reflects both the artistry of Greek baking and the joy of communal feasting. Today, Tsoureki is beloved not only in Greece but also among Greek communities worldwide, often adapted with various fillings and toppings to suit modern tastes.

1

Warm half of the milk and melt the yeast inside.

2

In a medium-sized pan, place four eggs, keep one for egg wash, add remaining cold milk and all sugar, and warm on medium heat without boiling.

3

In a small pan, melt margarine and butter together.

4

Once the butter and margarine are melted and the egg mixture is ready, take two cups of flour in a separate bowl.

5

Add vanilla, a pinch of salt, orange and lemon zest, and spices to the flour.

6

Add the egg mixture and stir until incorporated.

7

Add half of the melted butter, mix well, then add the risen dough and mix until incorporated.

8

Add the remaining butter in two parts, mixing well each time.

9

Judge the consistency and add remaining flour if too sticky.

10

Cover with cling film and place in the oven at 40°C until doubled in size, about 1.5 hours.

11

Divide the dough into three equal parts, then divide one part into three for braiding.

12

Roll each part into a snake shape and braid them together.

13

Place the braid back in the oven for about 2 hours to rise, or cover with blankets.

14

Whisk the remaining egg for egg wash and brush it over the braid.

15

Bake in the oven at 170°C for about 35 minutes, swapping trays halfway through for even cooking.
