Mix all-purpose flour and salt in a bowl.
Add water gradually and knead into a smooth dough.
Cover the dough with a damp cloth and let it rest for 30 minutes.
Boil potatoes until tender, then peel and mash them.
Heat oil in a pan and add cumin seeds until they splutter.
Add chopped fenugreek leaves, ginger, and green chilies; sauté for 2-3 minutes.
Stir in mashed potatoes, coriander powder, garam masala, and lemon juice; mix well and cook for 5 minutes.
Remove from heat and let the filling cool.
Divide the dough into small balls and roll each into a circle.
Cut each circle in half to form two semi-circles.
Take one semi-circle, fold it into a cone, and seal the edge with water.
Fill the cone with the potato filling and seal the top edge.
Heat oil in a deep pan until hot, then fry the samosas until golden brown, about 5-7 minutes.
Drain on paper towels before serving.
