1

Boil and peel 4 duck eggs.

2

Make 2 or 3 slits on each boiled egg with a knife, being careful not to cut too deep.

3

Heat coconut oil in a Karai over medium-high flame.

4

Once the oil is hot, add mustard seeds and dry red chilies, letting them crackle for a few seconds.

5

Add curry leaves and fry for a few more seconds.

6

Add chopped garlic and chopped ginger, sautéing until fragrant.

7

Add sliced onions and fry until they take on a light golden brown color, about 5 minutes, stirring occasionally and adding salt to help them cook faster.

8

Once the onions are done, add hing and fry for a few seconds.

9

Add sliced tomatoes and cook until soft and mushy, allowing their juice to enhance the gravy.

10

Add red chili powder, turmeric powder, and crushed black pepper, cooking for 2 minutes.

11

Add salt to taste and cook for another 5 minutes until the oil separates from the masala.

12

Add split green chilies and mix in.

13

Add 1 cup of water to adjust the consistency of the gravy.

14

Add the boiled eggs to the masala and coat them well with the gravy.

15

Simmer the curry for another 5 minutes on low heat, allowing the water to evaporate and the eggs to absorb the flavors.
