1 chorrito de Brandy
2 l de agua o caldo de pescado

Troceamos todas las verduras y las ponemos a pochar con el aceite de oliva.

Cuando tomen color, añadiremos las cabezas de langostino y cuando éstas cojan temperatura flambearemos con un chorrito de Brandy.

Volvemos a levantar la salsa y ya tenemos nuestra base hecha.

Para hacer la presentación, salteamos en una sartén los pescados y mariscos elegidos, añadimos un poquito de Brandy, dejamos reducir e incorporamos dos cucharones de salsa americana.
